Blu Bistro has been described as casual-fine dining with a Southern twist, fusing typical upscale menu items with down-home touches. Blu Bistro is located in the heart of the Springhill district at the corner of Bit and Spur and Old Shell Road. "We have white linens and antique chairs, but we're not pretentious. We have fun. This is not a fussy restaurant" chef and owner Kevin Brooks says. That is not to say that the quality doesn't compare with any other fine dining restaurant in the area. Fresh gulf seafood and hand-cut Angus steaks are bought fresh on an almost daily basis to provide the freshest of ingredients. It is also home to award winning dishes such as the Gingham Salad. The restaurant features an extensive wine list and is available for private parties.

Blu Bistro will be hosting regular wine dinners with special menus regularly after the new year, as well as hosting holiday dinners. The restaurant will also be offering regularly updated recipes from the chef, coming soon on this website.
